Heirloom Tomato Salad
This is a super simple heirloom tomato salad. It has a lovely, sweet, tangy flavour, and in peak season, it can be eaten fresh without any dressing for breakfast, lunch or dinner.
- 400g tomatoes sliced
- 1 large shallot sliced
- 1/4 cup (10g) flat-leaf parsley roughly chopped
- 1/4 cup (10g) chives chopped
- 1 tablespoon extra virigin olive oil
- 1/4 teaspoon sea salt
- freshly ground pepper
Add tomatoes, shallot, olive oil, parsley, and salt in a salad bowl; toss to combine and sprinkle with chives—season to taste with extra salt and ground pepper. Spoon into bowls and serve immediately.
