JUST Egg Brioche French Toast
Quick and easy JUST Egg Brioche French Toast! It comes together in just a few minutes, and it’s every bit delicious. Brioche bread gets dipped in vegan custard, cooked till golden brown, and served warm with your favourite toppings.
- 6 slices Brioche bread, cut into 3cm/1inch slices
- 1 cup JUST Egg
- 1/2 cup oat milk, creamy full fat
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- Zest of 1/2 lemon
- Coconut oil, for frying
In a wide shallow dish, mix JUST Egg, sugar, vanilla, cinnamon, nutmeg, lemon zest and milk, whisk until incorporated. Lay the brioche slices in the custard mix and soak for 10 minutes. Then flip the slices and soak for ten more minutes.
Heat a large frying pan over medium to high heat and brush with coconut oil. Lay each of the soaked brioche slices into the frying pan and fry for about 2 minutes on each side or until golden brown. Flip over and fry for a further 2 minutes until the second side is golden brown.
Repeat with the remaining slices of bread. Serve with your favourite toppings.
