Heirloom Tomato Salad
This is a super simple heirloom tomato salad. It has a lovely, sweet, tangy flavor and in peak season they can be eaten fresh without any dressing for breakfast, lunch or dinner. Essentially this is the type of salad you might eat along the Mediterranean coastline throughout summer.
It serves as a reminder that good quality produce is all you need to make a delicious summer salad and a little bit of olive oil, salt and pepper. There is not much in this salad as the flavor resides in the fruit itself.
Most often we make this salad using ripe tomatoes, but as autumn comes tomatoes ripe at different rates. You can enjoy a mix of red, orange and slightly unripe green tomatoes in early autumn.

Heirloom Tomato Salad
Ingredients
- 400g tomatoes sliced
- 1 large shallot sliced
- 1/4 cup (10g) flat-leaf parsley roughly chopped
- 1/4 cup (10g) chives chopped
- 1 tablespoon extra virigin olive oil
- 1/4 teaspoon sea salt
- freshly ground pepper
Instructions
- Add tomatoes, shallot, olive oil, parsley, and salt in a salad bowl; toss to combine and sprinkle with chives—season to taste with extra salt and ground pepper. Spoon into bowls and serve immediately.
