JUST Egg French Toast

This easy to make vegan french toast is made with JUST Egg, a plant-based egg substitute. Imagine a plant-based liquid egg that looks and feels just like a scrambled egg; only it’s eggless. It’s smooth, creamy and by the time you add the rest of the ingredients, you’ll be halfway to eating the best vegan French toast.

  • Brioche bread or French loaf, stale or dried
  • JUST Egg
  • Plant milk
  • Sugar
  • Vanilla
  • Cinnamon
  • Nutmeg
  • Lemon zest
  • Coconut oil
  • Favourite toppings

How to make Brioche French Toast

This JUST Egg Brioche French toast is made with homemade Brioche bread, but using other types of leftover bread works too. Bread must be stale and a bit on the dry end to help soak up the custard.

  1. Make the vegan custard. In a wide shallow dish, mix JUST Egg, sugar, vanilla, cinnamon, nutmeg, lemon zest and milk, whisk until incorporated.
  2. Soak the brioche. Lay the brioche slices in the custard mix and soak for 10 minutes. Then flip the slices and soak for ten more minutes.
  3. Fry the soaked slices. Heat a large frying pan over medium to high heat and brush with coconut oil. Lay each of the soaked brioche slices into the frying pan and fry for about 2 minutes on each side or until golden brown. Flip over and fry for a further 2 minutes until the second side is golden brown. Repeat with the remaining slices of bread.
  4. Serve with your favourite toppings.

Ingredients
  

  • 6 slices Brioche bread, cut into 3cm/1inch slices
  • 1 cup JUST Egg
  • 1/2 cup oat milk, creamy full fat
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • Zest of 1/2 lemon
  • Coconut oil, for frying

Instructions
 

  • In a wide shallow dish, mix JUST Egg, sugar, vanilla, cinnamon, nutmeg, lemon zest and milk, whisk until incorporated. Lay the brioche slices in the custard mix and soak for 10 minutes. Then flip the slices and soak for ten more minutes.
